1 cup beef broth (low-sodium preferred)

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon dried rosemary

¼ teaspoon red pepper flakes (optional)

FOR FINISHING:

3 tablespoons fresh parsley, finely chopped

2 tablespoons fresh chives, sliced

Extra butter for serving (optional)

Lemon wedges for brightness (optional)


Instructions

1. Remove beef from refrigerator 20-30 minutes before cooking and pat completely dry with paper towels

2. Cut beef into uniform 1.5-inch cubes, trimming away large pieces of fat

3. Combine salt, pepper, garlic powder, onion powder, paprika, and thyme in a small bowl

4. Toss beef cubes with oil and seasoning mixture until evenly coated, let sit 10 minutes

5. Optional but recommended: Sear beef in batches in hot skillet with butter, 1-2 minutes per side until golden brown

6. Spray 6-quart slow cooker with cooking spray, add all beef cubes in even layer

7. Whisk together beef broth, Worcestershire sauce, Dijon mustard, rosemary, and red pepper flakes
