Ingredients
FOR THE BEEF BITES:
3 pounds beef sirloin or chuck roast, cut into 1.5-inch cubes
2 tablespoons avocado oil or olive oil
2 teaspoons sea salt
1 teaspoon black pepper, freshly ground
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon smoked paprika
½ teaspoon dried thyme
FOR THE GARLIC BUTTER SAUCE:
6 tablespoons unsalted butter, divided
8 garlic cloves, minced (about 3 tablespoons)
1 cup beef broth (low-sodium preferred)
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon dried rosemary
¼ teaspoon red pepper flakes (optional)
FOR FINISHING:
3 tablespoons fresh parsley, finely chopped
2 tablespoons fresh chives, sliced
Extra butter for serving (optional)
Lemon wedges for brightness (optional)
Instructions
1. Remove beef from refrigerator 20-30 minutes before cooking and pat completely dry with paper towels
2. Cut beef into uniform 1.5-inch cubes, trimming away large pieces of fat
3. Combine salt, pepper, garlic powder, onion powder, paprika, and thyme in a small bowl
4. Toss beef cubes with oil and seasoning mixture until evenly coated, let sit 10 minutes
5. Optional but recommended: Sear beef in batches in hot skillet with butter, 1-2 minutes per side until golden brown
6. Spray 6-quart slow cooker with cooking spray, add all beef cubes in even layer
7. Whisk together beef broth, Worcestershire sauce, Dijon mustard, rosemary, and red pepper flakes
8. Pour liquid mixture over beef, add 4 tablespoons butter cut into pieces, scatter minced garlic on top
9. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until fork-tender
10. Transfer beef to serving platter using slotted spoon, leaving liquid in slow cooker
11. Turn slow cooker to HIGH, add remaining 2 tablespoons butter to liquid
12. Simmer uncovered 10-15 minutes until sauce reduces by one-third and thickens
13. Pour thickened garlic butter sauce over beef bites, toss to coat
14. Garnish with fresh parsley and chives, add extra butter and lemon juice if desired
15. Serve immediately or keep warm on “warm” setting for up to 2 hours
