Ingredients
For the Crust:
2 1/2 cups all-purpose flour
1 tsp salt
1 tsp sugar
1 cup unsalted butter, cold and cubed
6–8 tbsp ice water
For the Filling:
6 medium apples (Granny Smith + Honeycrisp)
3/4 cup granulated sugar
1/4 cup brown sugar
2 tbsp flour
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp lemon juice
1 tbsp unsalted butter, cut into small pieces
Instructions
1. Make the dough: Mix flour, salt, and sugar. Cut in butter until crumbly. Add ice water slowly until dough comes together. Divide, wrap, and chill for 1 hour.
2. Prepare the filling: Toss apples with sugars, flour, cinnamon, nutmeg, and lemon juice.
3. Assemble the pie: Roll out one disc of dough, line the dish, add apple filling, dot with butter, cover with second disc, seal edges, and cut vents.
4. Bake: 400°F (200°C) for 20 minutes, then reduce to 350°F (175°C) and bake another 35–40 minutes until golden and bubbly.
5. Cool: Let rest at least 2 hours before slicing so the filling sets.
Notes
Mix tart and sweet apples for the best balance.
Chill the dough well for extra flakiness.
Brush the crust with milk or egg wash and sprinkle with sugar for sparkle.
Don’t stress about imperfections—rustic pies are the best pies.
