Description
Slow cooker chicken stew recipe with tender chicken, hearty vegetables, and rich broth.
Ingredients
2 lbs boneless chicken thighs
4 carrots, sliced
3 potatoes, cubed
2 celery stalks, diced
1 onion, chopped
4 cups chicken broth
2 tbsp tomato paste
2 cloves garlic, minced
1 tsp thyme
1 tsp rosemary
2 bay leaves
Salt & pepper to taste
2 tbsp cornstarch (optional)
Instructions
1. Chop all vegetables and cube chicken.
2. Optional: Sear chicken until golden brown.
3. Layer chicken and vegetables into slow cooker.
4. Add broth, tomato paste, garlic, and seasonings.
5. Cook on low 6–8 hours or high 3–4 hours.
6. Stir in cornstarch slurry to thicken, if desired.
7. Garnish with parsley and serve hot.
Notes
Serve with bread or rice. Tastes even better the next day. Freezes well for up to 3 months.
