Description

Juicy chicken breasts roasted with broccoli and potatoes, coated in lemon-garlic olive oil. Crispy edges, zesty flavors, ready in under 30 minutes.


Ingredients

2 chicken breasts

2 cups broccoli florets

2 medium potatoes, diced

3 tbsp olive oil

3 cloves garlic, minced

Juice of 1 lemon

1 tsp dried oregano

Salt & black pepper


Instructions

1. Preheat oven to 400°F (200°C).

2. Place chicken, broccoli, and potatoes on a sheet pan.

3. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper. Drizzle over ingredients and toss.

4. Roast 25–30 minutes, flipping potatoes halfway, until golden.

Notes

Swap in sweet potatoes or carrots. Sprinkle with parmesan before serving.
