Description

A hearty and flavorful classic beef chili, perfect for a comforting meal on a chilly day.


Ingredients

1 tablespoon olive oil

1.5 pounds ground beef (80/20 or 90/10)

1 large onion, chopped

3 cloves garlic, minced

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (or to taste)

1 (28 ounce) can crushed tomatoes

1 (15 ounce) can diced tomatoes, undrained

2 (15 ounce) cans kidney beans, rinsed and drained

1 cup beef broth

Salt and black pepper to taste

Optional toppings: shredded cheddar cheese, sour cream, chopped green onions, sliced jalapeños, tortilla chips


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

2. Add the chopped onion to the pot with the browned meat and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

3. Stir in the chili powder, ground cumin, dried oregano, and cayenne pepper. Cook for 1 minute, stirring constantly, until the spices are fragrant.

4. Add the crushed tomatoes, diced tomatoes (with their juice), kidney beans, and beef broth to the pot. Stir everything together.

5. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it simmer for at least 1 hour, or up to several hours, stirring occasionally. The longer it simmers, the more the flavors will meld.

6. Taste the chili and adjust the seasonings as needed. Add more salt, pepper, or chili powder to suit your preference.

7. Serve hot with your favorite toppings.

Notes

For a thicker chili, simmer uncovered for the last 30 minutes to allow some liquid to evaporate.

For a vegetarian version, omit the ground beef and add extra beans or other vegetables like bell peppers, corn, and zucchini.

Chili tastes even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months.
