Description

A healthy and vibrant carrot ribbon salad tossed in a tangy sesame lime dressing. Perfect for meal prep, parties, or clean eating.


Ingredients

Scale
  • 810 large carrots, peeled into ribbons

  • 1 cup parsley or carrot tops, chopped

  • 1 garlic clove, grated

  • Zest and juice from 1 lime

  • 2 tbsp extra virgin olive oil

  • 2 tbsp soy sauce

  • ½ tsp black pepper

  • 1½ tbsp toasted sesame seeds


Instructions

  • Wash and peel carrots into ribbons.

  • In a bowl, combine chopped herbs, garlic, lime, olive oil, soy sauce, and pepper.

  • Toss carrot ribbons in dressing.

 

  • Top with sesame seeds and serve.

Notes

  • This carrot ribbon salad is naturally gluten-free, dairy-free, and vegan.

  • To intensify flavor, let the salad marinate in the dressing for 10–15 minutes before serving.

  • Add toasted nuts or chickpeas for extra protein.
