A healthy and vibrant carrot ribbon salad tossed in a tangy sesame lime dressing. Perfect for meal prep, parties, or clean eating.
Ingredients
8–10 large carrots, peeled into ribbons
1 cup parsley or carrot tops, chopped
1 garlic clove, grated
Zest and juice from 1 lime
2 tbsp extra virgin olive oil
2 tbsp soy sauce
½ tsp black pepper
1½ tbsp toasted sesame seeds
Instructions
Wash and peel carrots into ribbons.
In a bowl, combine chopped herbs, garlic, lime, olive oil, soy sauce, and pepper.
Toss carrot ribbons in dressing.
Top with sesame seeds and serve.
Notes
This carrot ribbon salad is naturally gluten-free, dairy-free, and vegan.
To intensify flavor, let the salad marinate in the dressing for 10–15 minutes before serving.
