  • 1/3 cup extra virgin olive oil
  • 2/3 cup warm whole milk
  • 1 ½ cups tapioca flour
  • ½ cup grated cheese (Parmesan, mozzarella, or cheddar)
  • 1 tsp salt

Set your oven to 400°F (200°C). Lightly grease a mini muffin tray, or use silicone muffin liners if you have them.

Place all the ingredients into a blender. Blend until the mixture is smooth and creamy. Don’t worry if the batter seems thin, it’s supposed to be.

Pour the batter into the muffin cups, filling each one about ¾ full. This gives them room to puff up while baking.

Place the tray in the oven and bake for 15–20 minutes, or until the cheese breads are puffed and golden brown on top.
