Description

Moist banana pumpkin bread filled with warm spices and studded with gooey chocolate chips — a cozy fall favorite loaf.


Ingredients

2 medium ripe bananas, mashed (about 3/4 cup)

1 cup pumpkin puree

2 large eggs

1 cup light brown sugar (or coconut sugar)

1/3 cup vegetable oil

1 tablespoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1 tablespoon pumpkin pie spice

1/4 teaspoon salt

1 cup semisweet chocolate chips


Instructions

1. Preheat oven to 350°F and line a 9×5 loaf pan with parchment paper.

2. In a large bowl, whisk together mashed bananas, pumpkin puree, eggs, sugar, oil, and vanilla until smooth.

3. In a separate bowl, combine flour, baking soda, pumpkin pie spice, and salt.

4. Fold dry ingredients into wet mixture until just combined.

5. Stir in chocolate chips.

6. Pour batter into prepared loaf pan and smooth the top.

7. Bake 55–60 minutes, or until a toothpick inserted in the center comes out clean.

8. Cool bread in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store in an airtight container at room temperature for up to 4 days.

Bread can be frozen up to 2 months.

Try toasting slices and spreading with cream cheese for a breakfast twist.
